Yummy Protein Rich Cabbage Stew
This Yummy Protein Rich Cabbage Stew came to me on a cold evening night. I was so happy to find a recipe that was jammed packed with cabbage that Shane actually liked! Cabbage wasn’t really his favorite but with the right combination of vegetables, it can give these dishes that certain flavor that you just fall in love with. Now he can’t get enough of it!
Ingredients
- 2 garlic cloves (minced)
- 1 tsp. smoked paprika
- ½ tsp. turmeric
- ½ tsp. ground pepper
- 1 tsp. sweet paprika
- 1 tsp. garlic powder
- 1 tsp. thyme
- 1 tsp. oregano
- ½ of a small cabbage (shredded)
- 1 small onion (chopped)
- 1 cup tomato sauce
- 2 cups veggie broth
- ½ cup lentils (uncooked)
- 2 medium sized potatoes (chopped)
- For the Cashew Cheese
- 1 cup cashews (raw)
- ½ cup water
- 2 Tbsp. lemon juice
- 2 garlic cloves
- ½ tsp. salt
Instructions
- Sauté the garlic and onions for about 5 Minutes over medium heat with 4 Tbsp. of water in a
pot till the onions turn transparent. Pour in the salt, smoked paprika, turmeric, ground
pepper, sweet paprika, garlic powder, thyme, and oregano. - Add the tomato sauce and cabbage and cook over medium heat for 5 minutes.
- Next, stir in the lentils, potatoes and broth. Cook the soup in a covered pot for about 20 - 30 minutes until the potatoes and lentils are tender. Cook down longer to desired thickness! (We like our stews thick)
- To make the cashew cheese, blend the cashews with water, lemon juice, garlic and
salt in a high speed blender until smooth. - Top the soup with 2 Tbsp. of the yummy cashew cheese and enjoy immediately!
Notes
Goes great with some garlic bread or bread sticks!
