Introduction – Mac N’ Cheeze
This Spicy Mac N’ Cheeze will make your mouth water…..The consistency is so smooth you will think it is real cheese.
Ingredients
- 2 Small Potatoes
- 1 Carrot
- 1 Clove Garlic
- 1/4 Cup Chopped Onions
- A Handful of Cashews (Soaked if not Using a Vitamix)
- 1/4 Avocado
- 1 tsp Chipotle Powder
- 2 tsp Salt (add more or less to taste)
- Pasta of Choice (Try Lentil Pasta or Rice Pasta for a Gluten-Free Option)
- Chopped Green Onions on Top
Instructions
Cheeze Sauce
- Chop potatoes, carrot, onions, and garlic and place them in a pot with water. They can be left big as they will be blended later.
- Boil until the potatoes, carrots, and onions begin to get soft.
- Place all rest of ingredients in the blender. Preferably a High Power Blender as this will get thick.
- Scoop out potatoes, carrot, onions and garlic out of the water and add to the Blender with other ingredients. Save the water!!
- Add a couple scoops of the vegetable water to the blender and begin to blend.
- Keep adding more until desired cheezy consistency is reached. We like our cheese sauce to to be thick for extra goodness!
Pasta
- Boil and cook desired pasta to go along with your cheeze sauce. If there is any left it can be put in the fridge for up to a week later to enjoy again and again.
Can be Topped with chopped green onions as a garnish or to add flavour.

Try adding 1 Tbsp of Nutritional Yeast to the Cheeze Sauce for a Cheezier flavor!
