This Sicilian Pistachio Gelato always reminds me of how delicious pistachio gelato really is. I can’t seem to get enough of it! So flavorful and creamy with every bite. Definitely an amazing treat in the summer or anytime of the year!
Ingredients
- 1/3 cup pistachios (shelled)
- ½ cup almond milk
- 1/3 cup dates (soaked, covered in water, use both)
- ½ cup spinach
- 1/3 cup + 1 tbsp - peanut butter or almond butter
- 1 tbsp almond extract
- 1 tbsp vanilla extract
- 2 tbsp gojis
Instructions
- First, blend the dates and the water that was used for soaking them in a high speed blender.
- Add the rest of the ingredients and blend until it is fully homogenized.
- Pour the mixture into a container.
- Put the covered container in a freezer for 5 hrs or overnight.
- Enjoy!
