These Pistachio Orbs are a great on the go snack! Jam packed with protein it gives you that added energy when you are on the go. These Orbs will keep you satisfied on the go. I guess you can call it more like a meal than a snack. Enjoy 🙂
Ingredients
- 1 cup unshelled pistachios
- 1/2 cup unsweetened coconut flour
- 1 cup oat flour
- 1 heaping 40g scoop of vanilla protein powder (We used Vega Protein)
- 1/3 cup peanut butter
- 2/3 cup water
- 1 cup soaked dates
- 1 tbsp vanilla extract
Instructions
- Blend the pistachios into a flour in a food processor.
- Then transfer the pistachio flour into a bowl.
- Add all the remaining ingredients in a food processor. Pulse the pistachios back in the food processor. After mixing everything well together roll the dough into bite size balls.
- To keep them fresh store them in an airtight container in the fridge or freezer.
Notes
The orbs last for a month in the freezer or 1 week in the fridge if you didn’t eat them all up already!
