The Tropical Chia Parfait is a delicious treat that can be eaten for breakfast or as a super nutrient rich afternoon snack.  It is easy, fun and tastes amazing.  You can add your favorite fruits to this parfait to make it even better. Try it out for yourself!

Ingredients

  • 1/3 cup chia seeds
  • 1 tbsp vanilla extract
  • 2 tbsp preferred sweetener (I used maple syrup)
  • 1 can coconut milk
  • 1 ½ cup strawberries (chopped)
  • 2 mangoes (chopped)
  • shredded coconut (Top)

Instructions

Chia Pudding

  1. For best results soak chia seeds with the coconut milk, vanilla extract and your preferable sweetner overnight in a glass bowl.  If short on time you can soak the chia seeds for 15 - 20 minutes.

Tropical Chia Parfait

  1. Fill the glasses by alternating the chia pudding, strawberries and mangoes.  Fill each glass at the same time so you get the same amount in each glass.
  2. Sprinkle some shredded coconut on top
  3. Enjoy!

Notes

You can use any of your favorite fruits for this chia parfait! Tip: Try adding peanut butter as a topping!
